Balsamic Grilled Halibut Fillets

1 cup fat free balsamic vinaigrette

2 tbsp grated lemon peel

2 tbsp extra virgin olive oil

6 6oz Halibut fillets

juice from 1 lemon


Heat the grill.


In a shallow baking dish, whisk together the vinaigrette, lemon peel and oil. Add the halibut and turn to coat both sides.


Cover and let stand at room temperature for 10-15 minutes.


Brush some oil on the grill rack and place the fish on the grill and cook on medium high for about 7 minutes or until the fish flakes. Turn only once.


Baste the fish with the marinade often throughout cooking.


Place the fish on a serving platter and squeeze the lemon juice all over the fillets.
