Baked Acorn Squash Serves 6

3 Acorn squash, halved and seeded

salt and pepper to taste

6 tbsp butter, cubed

½ cup firmly packed brown sugar

1 tsp ground cinnamon


Preheat the oven to 350°.


Place the acorn squash cut side down in a baking dish. Bake for 30 minutes, or until tender and golden.


Remove from the oven and turn the squash cut side up. Season with salt and pepper, distribute the cubed butter evenly over the 6 halves. Sprinkle with the brown sugar and cinnamon.


Bake for another 20 minutes.
