Apple Cake 12-15 servings

1 ½ cup chopped pecans

½ cup butter, melted

2 cups sugar

2 large eggs

1 tsp vanilla

2 cups flour

2 tsp cinnamon

1 tsp baking soda

1 tsp salt

2 1/2lb granny smith apples (about 4 large)

Cream Cheese Frosting


Preheat the oven to 350°


Lightly grease a 13 x9 glass baking dish and set aside.


Bake the pecans in a single layer on a cookie sheet for 5-7 minutes, stirring halfway through.


In a medium bowl combine the butter, sugar, eggs and vanilla.


In a large bowl combine the flour, cinnamon, baking soda and salt. Add the butter mixture. Mix well.


Peel the apples and cut into 1/4" wedges. Add to the flour and butter mixture. Add 1 cup of the pecans. (the batter will be very thick)


Spread the batter in the prepared baking dish and bake for 45 minutes or until a wooden toothpick inserted in the center comes out clean. Cool completely.


Spread the frosting over the top of the cake and sprinkle with the remaining pecans.
