Simple Roasted Red Potatoes Serves 8

3lb small red potatoes, halved

¼ cup extra virgin olive oil

1 tsp salt

1 tsp fresh ground black pepper

Preheat the oven to 450°

Adjust the oven rack to the lowest position.

In a large bowl, toss the potatoes with the olive oil, salt and pepper.

Arrange the potatoes, cut side down on a large foil cookie sheet.

Roast for 20-30 minutes or until golden brown and tender.

Transfer to a serving dish.
