Mixed Greens and Beet Salad


1 11oz can Mandarin orange sections in juice , undrained

½ cup light raspberry vinaigrette dressing

1 8oz package mixed greens

1 14oz can julienne style beets

½ cup slivered almonds

½ small red onion, thinly sliced


Drain the Mandarin oranges, reserving 2tbsp of juice.


In a small bowl combine the raspberry vinaigrette with the reserved juice.


Mix the greens, Mandarin oranges, red onion and almonds in a large bowl. Toss lightly with a little of the dressing.


Top the salad with the beets and add more dressing. Ready to serve.
