3lbs red potatoes, cut into quarters
8 tbsp butter, cut into pieces
1 cup heavy cream
¼ cup fresh chives, finely chopped
¼ cup parsley, finely chopped (optional)
freshly ground black pepper
Place the potatoes in a large pot and cover with water. Bring to a boil and continue boiling for about 25 minutes, or until the potatoes can easily be pierced with a fork.
Drain the potatoes and return to the pot. Add the butter and mash. Add ¾ cup of the cream and continue to mash. If you are happy with the consistency of the potatoes do not add the remaining cream.
Stir in the chives, salt and pepper to taste.
