2lbs small red potatoes, washed and quartered
4 tbsp diced Vidalia onion
6 tbsp butter, melted
3 tbsp honey
2 ½ tsp ground mustard
½ tsp salt
½ tsp freshly ground pepper
Preheat the oven to 375°.
Lightly coat a large foil cookie sheet with a butter based cooking spray.
Place the potatoes in a large mixing bowl and add the onion.
In a small bowl combine the melted butter, honey, mustard, salt and pepper. Add to the potatoes and toss to combine. Spread the potatoes on the prepared cookie sheet. Drizzle any remaining liquid in the bowl over the potatoes.
Bake for 35 minutes or until tender, stirring halfway through the bake time.
