4 (8oz) baking potatoes
5 tbsp butter, melted
¼ cup seasoned bread crumbs
¼ cup fresh grated parmesan cheese
salt and pepper to taste
Preheat oven to 425° Oil a glass baking dish.
Peel the potatoes and place in a bowl of cold water to prevent them from discoloring.
Place 2 long chop sticks or wooden skewers on either side of the potato on a cutting board. Slice each potato crosswise about 1/8” slices and about ¼” from the bottom of the potato. ( the chopsticks will prevent you from cutting all of the way thru) After cutting each potato return to the water to prevent the discoloring.
Place the potatoes cut side up in the baking dish and drizzle with half of the butter. Make sure some gets inside the potato. Season with salt and pepper.
Mix the parmesan cheese, bread crumbs and 1 tbsp of butter in a small bowl. Pat the mixture onto the top of each potato. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes .
Remove from the oven (they should be golden brown and crispy on the outside). Drizzle with the remaining 2 tbsp of butter and serve.
