Grilled Garlic and Cumin Potatoes Serves 4

12 unpeeled small red potatoes, quartered

4 tbsp butter, melted(may substitute olive oil for butter)

1 tsp garlic powder

1 tsp ground cumin

1 tsp paprika

½ tsp salt

½ tsp pepper

¼ cup chopped fresh cilantro


Place the potatoes in a large bowl and add the butter, garlic, cumin, paprika, salt and pepper. Toss well to coat.


Place the potatoes in a foil pan and cover. Place on the grill and grill for 20-30 minutes shaking the pan from side to side frequently throughout cooking.


Remove from the grill to a serving dish and add the chopped cilantro; toss and serve.
