Black Bean and Pearl Couscous Salad Serves 6

1 cup uncooked Pearl couscous

1 ¼ cup chicken broth

6 tbsp extra virgin olive oil

4 tbsp fresh lime juice

2 tsp red wine vinegar

1 tsp ground cumin

8 scallions, thinly sliced(white and light green parts only)

1 red bell pepper, diced

¼ cup chopped fresh cilantro

1 cup frozen corn kernels, thawed

2 (15oz) cans black beans, drained and rinsed

salt and pepper to taste


In a 2qt saucepan, bring the chicken broth to a boil and add the couscous. Cover and remove from the heat. Let stand for 5 minutes.


In a large bowl, whisk the olive oil, lime juice, vinegar and cumin together. Add the scallions, red pepper, cilantro, corn and beans. Toss.


Fluff the couscous and add to the bowl. Mix well and season with salt and pepper to taste. You may serve immediately or refrigerate and serve.
