4 medium-sized potatoes, cut into small cubes (I’ve used russets, yukon golds and reds)
2 tbsp sesame oil
3 tbsp soy sauce
1/2 tsp ground ginger
1/2 tsp garlic powder
pinch red pepper flakes (optional)
Preheat your oven to 450F.
Place your potatoes in a large baking dish, then drizzle with soy sauce and sesame oil.
Sprinkle the potatoes with ground ginger, garlic power and, if using, red pepper flakes. Toss to combine.
Place the baking dish in the oven for about 25 minutes. Remove, shuffle the potatoes around, then return to the oven for another 20-25 minutes.
