Olive Oil cooking spray
2 tbsp extra virgin olive oil
½ cup Panko crumbs
freshly ground black pepper
2 medium zucchinis
½ cup freshly grated Parmesan cheese
¼ tsp salt
Preheat the oven to 450°.
Coat a baking sheet with the cooking spray.
Slice the zucchini into ¼” slices.
In a medium bowl toss the zucchini with the olive oil until coated.
In a small bowl combine the Parmesan, bread crumbs, salt, and pepper to taste.
Dip each zucchini slice into the Parmesan mixture, pressing slightly to coat both sides. Place in a single layer on the baking sheet.
Bake until browned and crisp. Approximately 20 minutes.
Serve with Horseradish Aoli or your favorite dipping sauces.
