Taco Dip Serves 20

2 16oz cans refried beans

2 avocados, peeled and pitted

1 4oz can chopped jalapeno peppers

1 envelope taco seasoning

2tbsp fresh lemon juice

½ cup fresh salsa

1 small jar salsa

1 ½ cup sour cream

3 cups shredded lettuce

1 ½ cup grated cheddar cheese

Sliced black olives, to taste



Mix the refried beans, jalapenos and taco seasoning in a medium bowl. Spread on a platter.


Blend the avocados, lemon juice and fresh salsa. Spread on top of the beans.


Spread the sour cream on the top of the avocado mixture. Add a layer of shredded lettuce, cheddar cheese and jar of salsa. Top with black olives.


Serve with tortilla chips.
