Summer Pasta Serves 6

1 16oz package of linguini

6 plum tomatoes, chopped

1lb shredded mozzarella cheese

½ tsp garlic salt

ground black pepper to taste

1/3 cup chopped fresh basil

6 cloves garlic, minced

½ cup extra virgin olive oil

Combine the tomatoes, cheese, basil, garlic, olive oil, garlic salt and black pepper in a large bowl.

Meanwhile cook the pasta according to the package directions. Drain and transfer to a large serving bowl and toss with the tomato mixture.

Serve with fish or chicken and warm crusty bread.
