Roasted Butternut Squash Serves 4

1 large butternut squash; peeled, seeded and cut into 1” cubes

3tbsp extra virgin olive oil

3 cloves of garlic, minced

salt and pepper to taste

Preheat oven to 400°

Toss the squash, garlic and olive oil in a large bowl.

Arrange the squash on a baking sheet and season with salt and pepper.

Bake for 25-30 minutes or until the squash is tender and lightly browned.
