Parmesan and Lemon Crusted Flounder Serves 4

Butter Cooking Spray

1 ½ cups Panko

2 lemons, zested and juiced

½ cup freshly grated Parmesan cheese

2 tbsp extra virgin olive oil

4 cloves garlic, minced

2 eggs

4 large flounder filets


Preheat the oven to 375°


Coat a baking sheet with the cooking spray and set aside.


In a large pie plate mix together the panko, lemon zest, grated Parmesan, olive oil and garlic.


In another large pie plate whisk the eggs. Take each flounder filet and dip in the eggs, coating both sides. Press each filet into the Panko mixture coating completely on both sides. Place on the baking sheet.


Sprinkle remaining Panko mixture over the filets and drizzle with 2-4 tbsp of lemon juice. (to taste)


Lightly spray the top of the fish with the cooking spray and bake for 20-25 minutes.
