Mexican Baked Beans Serves 12

2 tbsp vegetable oil

2 medium Vidalia onions, diced

2 medium green bell peppers, diced

¼ cup light brown sugar

4 28oz cans baked beans, New England style

4 tsp chili powder

2 tsp salt

1 tsp dried oregano

1 bag of Fritos corn chips


Preheat the oven to 350°


Grease a 13 x 9 baking dish(I use a little larger for more room but 13 x 9 works)and set aside.


Heat the vegetable oil in a large skillet over medium heat and add the onions and green pepper. Stir n the brown sugar and cook until the vegetables are tender. About 10 minutes.


In the baking dish, combine the baked beans with the vegetables, chili powder, salt and oregano.


Top with about 2 cups of crushed Fritos. (add more or less as desired).


Bake for 45 minutes until hot throughout.
