Low Carb Flounder with Lemon Soy Vinaigrette Serves 4

4 large flounder fillets

2 garlic cloves, minced

¼ cup fresh lemon juice

1 tbsp + 1 tsp soy sauce

1 teaspoon Swerve granulated

¾ tsp salt

¼ cup extra virgin olive oil

Preheat the oven to 450°

Place the flounder fillets on a foil baking sheet.

In a small mixing bowl, combine the garlic, lemon juice, soy sauce, Swerve, salt and olive oil. Whisk vigorously to make sure the lemon juice, soy sauce and olive oil become combined.

Pour the sauce over the fish and bake for 8 minutes. Cooking times may vary slightly depending on the size of your fillets.

Flounder is ready when no longer translucent.
