5 cups uncooked orzo
3 lb cooked jumbo lump crabmeat
14 plum tomatoes, chopped
3 carrots, peeled and diced
3 medium red peppers, diced
3 medium green peppers, diced
10 green onions, chopped
1 2/3 cup mayonnaise
½ cup chili sauce
3tbsp and 1tsp of freshly squeezed lemon juice
1 ½ tbsp. plus 1tsp of salt
1 ¾ tsp black pepper
10 drops of hot pepper sauce
Bring a large saucepan of lightly salted water to a boil, and cook the orzo according to the package directions for al dente. Drain and refrigerate for 1 hour.
In a large bowl toss the chilled orzo, crabmeat, tomatoes, carrots, peppers and the green onions.
In a small bowl, mix the mayonnaise, chili sauce, lemon juice, salt, pepper, and the pepper sauce. Add to the orzo/crabmeat mixture and toss.
