Broiled Parmesan Tomatoes Serves 6

5 medium size ripe tomatoes, halved

10 pats of butter (10 individual teaspoons)

½ cup butter(for melting)

8 green onions, chopped

6 tbsp Italian bread crumbs

2 tbsp fresh grated Parmesan cheese

¼ tsp salt

¼ tsp garlic powder

2 tbsp chopped fresh basil

½ cup shredded mozzarella cheese


Place the tomatoes cut side up in an ungreased baking dish(I used foil for easy clean up). Place a tsp of butter (or pat) on the top of each tomato half. Broil 4 inches from the element for 4-6 minutes, or until the butter has melted and the edges of the tomato soften.


In a medium microwave safe bowl, combine the ½ cup of butter, and the onions. Microwave on high until the butter has melted and the onions are tender.


Stir the breadcrumbs into the melted butter. Add the Parmesan cheese, salt, garlic powder and basil.


Spoon the breadcrumb mixture onto the top of each tomato. Sprinkle with the shredded mozzarella and broil for another 1-2 minutes or until the cheese has melted.
