3 tbsp butter
1 package button mushrooms, washed and stems removed
3 cloves garlic, minced
salt
¼ cup flat leaf parsley, finely chopped
4 green onions, chopped
1 average wedge of brie cheese
Preheat the oven to 350°
Melt the butter in a medium skillet. Add the mushrooms and turn to coat in the butter. Sprinkle with salt. Brown for just a few minutes being careful not to over cook.
Remove the mushrooms to a baking dish.
In the same pan, add the garlic, parsley and the green onions. Salt to taste. Stir for a few moments to let the parsley wilt. Remove from the heat.
Cut the rind off the brie and cut into small pieces to fit inside each mushroom cap. Press the cheese into the mushroom and top with the parsley mixture.
Bake for 15 minutes or until the brie has melted.
